I typically have RCS on fuel stations even though they're heavier than the ships to refuel and it's thus more wasteful, but it saves the mass of RCS on the spacecraft.

Sometimes I see videos of spacecraft with RCS instead of RWs. I guess that's for realism.

Well, I use RCS to dock on asteroids or so. But not for attitude control.

for large nonsense, I used tugs that would pull the tanker to the fuel station. seeing 4 MechJeb-controlled probes fly out to a ship and dock with its ports was nice :)
