Freelancer had about the most simple. Shooting at small fragments (and only small fragments) floating in the fields would leave behind ore that could be tractored in.

Elite Dangerous ended up having pretty fun mining. Sure, you could simply shave off bits with a standard mining laser, but otherwise you could blow them apart completely and recover the innards. You still had to have a refinery to process the ore regardless, and little drones to acquire the ore to return to the ship are a must-have for larger ships
