Beneath the engine plate, there's one (or multiple) attachment point for the engine and below that another one for the next stage that can be decoupled.

It becomes more obvious if you set the engine plate to the "long" variant.

That was actually the problem, "long" was so far it was off the screen

(And maybe easier to attach if the next part rapidly flickers between attachment points with a "short" engine plate.)
